My husband of the gods wanted cheesecake ice cream. Andreas Thomä kindly tinkered around for me.

The result is a cheesecake ice cream that really tastes just like papa-in-law's classic. Some also say "old German cheesecake".

Of course, the whole thing can be tasted with a nice raspberry or strawberry Variegato refine it (or with tangerines) or serve it with a fruity sauce, chocolate sauce ...

We prefer it pure.

Ingredients

50 g Eis-Perfecto
65 g plusPerfecto
10 g Bindemittel-Perfecto
90 g sugar
2 g citric acid (powder)
Salt (pinch)
130 g cream cheese 23%
270 g quark 20%
378 g whole milk 3,5%
5 g vanilla paste

Preparation

Step 1:
Mix all dry ingredients
Step 2:

Mix the milk, cream cheese, quark, vanilla paste and dry ingredients together on the highest setting for 2 minutes
Step 3:

Let the mix mature in the refrigerator for at least 60 minutes.
Step 4:
Freeze the ice with an ice cream maker or the hand method.
Step 5:

With a fruity one if you like Variegato Refine.
