I love yogurt ice cream in all its variations. This yogurt ice cream recipe with Greek yogurt, honey, and walnuts is simply amazing. My wife was able to eat the scoop you see in the photo above this morning. She absolutely loved it. Even my colleagues, who were very skeptical yesterday about whether it would work, were won over by the delicious yogurt ice cream. The ice cream is beautifully creamy, and the subtle hint of honey and walnut makes us want more.

If you don't like walnuts, you can swap them for other nuts or omit the nuts completely.

Ingredients

450 g yogurt 10%
130 g cream 30%
170 g milk 3,5%
90 g honey
20 g lemon juice
130 g Eis-Perfecto
10 g Bindemittel-Perfecto
a pinch of salt
Version without sugar
450 g yogurt 10%
130 g cream 30%
180 g milk 3,5%
80 g xylitol
20 g lemon juice
130 g Perfecto-X
10 g Bindemittel-Perfecto
a pinch of salt
Ingredients that are later added to the ice cream
200-250 g honeyVariegato
80 g walnuts (If you don't like walnuts, you can exchange them for other nuts or omit the nuts completely.)

Preparation

Step 1:
Roast the walnuts in a pan, quarter them and let them cool.
Step 2:
Mix all dry ingredients.
Step 3:
Mix the yoghurt, milk, honey, lemon juice and the dry ingredients together on the highest setting for 2 minutes.
Step 4:
Now add the cream and mix again briefly.
Step 5:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 6:
Freeze the ice with an ice cream maker or the hand method.
Step 7:
The walnuts with the honeyVariegato Mix.
Step 8:
Feel the finished ice cream in layers in a container and place the honey walnut between each layer Variegato layers.
