Because I made espresso a little more intense than I drink it normally! This gives this ice cream a really great coffee note. But that's not all, a little egg yolk is used in this ice cream for an even creamier mouthfeel. This gives us a better emulsion of fat and water. So we get a sensational ice cream experience.
