Ingredients

Ingredients ice cream
40g sugar
pinch of salt
15g binder
100g Perfecto minus
Only add 175g egg liqueur to the lukewarm mixture at the end
540g milk 3,5%
130g mascarpone

15g sugar
25-30 g Perfecto Variegato
50 g of cream
100 g egg liqueur

Preparation

Making ice cream
Step 1:
Mix the dry ingredients, mix with milk for 2 minutes at the highest level.
Step 2:
Heat the mix to 85 °, hold briefly.
Step 3:
Cool a little, add the mascarpone, mix briefly at the highest level.
Step 4:
Cool to lukewarm and add eggnog, stir well.
Step 5:
Stir in a water bath and let ripen for 3-6 hours in the refrigerator.
Step 6:
Mix briefly, freeze in the ice cream maker.
Step 7:
When layering in the ice cream container, eggnog Variegato layering.
Step 8:
Leave to freeze in the freezer for 24 hours.
