With this recipe you can easily make delicious nut pastes / nut butter for your ice cream and desserts.
Here are a few recommendations for roasting temperatures and times:
Pistachios 8-10 min. At 160 ° C
Walnuts 8-10 minutes at 200 ° C
Hazelnuts 8-10 minutes at 160 ° C
Peanuts for 10 minutes at 200 ° C
Macadamia nuts 8-10 min. at 160°C
Of course, everyone can play with times and temperatures here. These are values with which I have had good experiences.
If you don't feel like making the pastes yourself, or don't have the time, you can find ready-made ones in our shop Nut pastes.

After roasting and chilling, I put the nuts in the fridge for a couple of hours. Then they don't heat up so quickly when mashing.

Hello everybody…. I have a question for those who have already made the pastes themselves…. do you skin eg: walnuts or hazelnuts before roasting? My pistachios turned out quite "olive green" in color and not really rich green as I thought...??♀️ Do you have any experience with this?
Prompt answers please?

Hello Sabine,
if peeling after roasting, then it works best. You cannot get 100% of the green in pistachio. Because roasting turns the nuts brown. The gentle roasting we do here with pistachios is a compromise between taste and color ... A slightly longer roast would be better. Then the pistachio gets even more aroma, but also loses green and sometimes even completely brown. Therefore, ice cream parlors color their ice cream so that it turns green. LG Andreas

I would also be interested. If so, think more after roasting.

Hallo,
How about almonds?
If you've already bought roasted almonds, can you save yourself the step in the oven?

Still have a question, does a mixer work? I don't know what use you need for the food processor.

I haven't tried that yet ... you need to test it with a small amount ... maybe 150g of nuts

Didn't think it would be so easy to make your own nut pastes. With a blender (stand mixer with a lot of power) this is prepared in no time at all and then makes the ice cream nice?
Have you already tried it with walnuts, hazelnuts and peanuts?
Tip: get yourself Italian hazelnuts! With peanuts you can also use the already roasted and salted ones.
