Sensational mango sorbet recipe with 55% fruit. This mango sorbet is absolutely amazing! Very intense in taste and beautifully fruity. Since it is often not easy to get a good and aromatic mango, I made this recipe with the Ponthier mango puree. The result is sensational in taste and color. If you have no way of getting hold of Ponthier's mango puree, you can also make the mango sorbet recipe with mangoes. But then you have to make sure that you really take really aromatic fruits. This is the only way the mango really comes into its own. I'm not a mango ice cream or sorbet fan, but this sorbet tastes really good to me too.

Ingredients

610 g of Ponthier mango puree
(Alternatively you can use 550 g mango and 60 g more sugar)
192 g of water
50 g sugar
100 g Sorbet-Perfecto
35 g Perfecto-More
10 g Bindemittel-Perfecto
3 g citric acid
a pinch of salt
Optional 5g Perfecto-Cremosa paste or 4g Perfecto- Cremosa Natura

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the mango puree, citric acid, water and the dry ingredients together at the highest level for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for 60 minutes.
Step 4:
Now freeze the ice with an ice cream maker or the hand method
