Maybe when you take the first spoonful your first thought is “is that too much oil?” but somehow when you take the second spoonful you think it tastes really great, nutty and creamy and not oily.

Ingredients

115g Eis Perfecto
40g Perfecto Plus
1g salt
70g sugar
407g milk 1,5%
240g cream 30%
15g binder
110g pumpkin seed oil
caramelized pumpkin seeds'
40g sugar
80g natural pumpkin seeds

Preparation

Step 1:
Mix dry ingredients
Step 2:
Mix the milk, dry ingredients and seed oil for 2 minutes at the highest level
Step 3:
Add the cream and mix briefly on a low setting
Step 4:
Let the ice age for at least 60 minutes or overnight.
Step 5:
Put ice in the ice cream maker
Step 6:
Roast the pumpkin seeds dry in a pan and place in a bowl
Step 7:
Caramelize the sugar in the pan and add the seeds
Step 8:
Mix well and spread out on baking paper and let cool down.

ATTENTION do not touch or risk of burns
Step 9:
If you like crunch, put some of the kernels in the ice cream before it goes into the freezer. If not just put on top after portioning.

This is really something different. Great consistency, slightly strong in taste. I would use a little less pumpkin seed oil next time. But a treat with the caramelized pumpkin seeds?
