I hunted the pitted sour cherries through the slow juicer.

The Variegato underlines the fruity taste.
I hunted the pitted sour cherries through the slow juicer.
Core sour cherries, put in the slow juicer or berry press, Flotte Lotte, but 400g should remain.
Mix dry ingredients.
Heat briefly with milk to 85 °, cool down quite a bit.
Add sour cherries and lemon juice, stir well, mix on high for 2 minutes.
Add the cream, mix briefly.
Cool in a water bath.
Leave to mature in the refrigerator for 3-6 hours.
Mix, freeze in the ice cream maker.
Possibly with Variegato layers.
Mix dry ingredients.
Mix dry ingredients, pureed sour cherries and lemon juice in a saucepan with a whisk.
Cook everything for two minutes. (stir)
Immediately fill into sterilized screw-top jars, close and let stand for 24 hours.
