Fruity, very creamy milk-based sour cherry ice cream. (Sour cherry)

The Variegato underlines the fruity taste.

I hunted the pitted sour cherries through the slow juicer.

Ingredients

Ingredients ice cream
60g sugar
Pinch of salt salt
120g Eis perfecto
15g Perfecto binder
240g cream 36% (or 32%)
150g milk 3,5%
15g lemon juice
400g sour cherries, deseeded, weighed pureed!
Ingredients Variegato
85g frozen sour cherries pureed / or better fresh
40g Variegato Perfecto
30g sugar
10g lemon juice

Preparation

Step 1:
Core sour cherries, put in the slow juicer or berry press, Flotte Lotte, but 400g should remain.
Step 2:
Mix dry ingredients.
Step 3:
Heat briefly with milk to 85 °, cool down quite a bit.
Step 4:
Add sour cherries and lemon juice, stir well, mix on high for 2 minutes.
Step 5:
Add the cream, mix briefly.
Step 6:
Cool in a water bath.
Step 7:
Leave to mature in the refrigerator for 3-6 hours.
Step 8:
Mix, freeze in the ice cream maker.
Step 9:
Possibly with Variegato layers.
Preparation Variegato:
Step 1:

Mix dry ingredients.
Step 2:
Mix dry ingredients, pureed sour cherries and lemon juice in a saucepan with a whisk.
Step 3:
Cook everything for two minutes. (stir)
Step 4:
Immediately fill into sterilized screw-top jars, close and let stand for 24 hours.
