For a long time I wanted to perfect the walnut ice cream for my harshest critic (my daughter) and finally I succeeded?

Her words were: "Mommy, this is the best walnut ice cream ever ❤️?❤️ and tastes better than anything you can buy...can I please take it with me?"

Of course she was allowed ❤️?❤️

I skinned the walnuts completely for the walnut paste.

This is very time-consuming and I reached my limits, but it was worth it???

Preparation: Caramelize the walnuts
Step 1:
Caramelize the water, sugar and chopped walnuts in the pan until golden brown
Step 2:
Set the caramelized walnuts aside until you are ready to use them
Preparation of walnut paste
Step 1:
Bring water to a boil in a saucepan
Step 2:
Add walnuts, but do not boil any more, instead "bathe" the walnuts in them for five minutes
Step 3:
Place walnuts on a tea towel, knot the corners together and roll vigorously
Step 4:
Now carefully peel off the skin of the walnuts that is still there (detention, but it's worth it!)
Step 5:
Roast walnuts, 160 degrees / 8-10 minutes
Step 6:
Let the walnuts cool down
Step 7:
Process walnuts into paste in a food processor (I used my Kenwood's spice grinder for this)
Step 8:
Set the walnut paste aside until further processing
Step 9:
Preparation of walnut ice cream
Step 1:
Mix the dry ingredients together well
Step 2:
Mix the dry ingredients, milk, maple syrup and walnut paste for two minutes on the highest setting
Step 3:
Let the ice base mature in the refrigerator for at least three hours
Step 4:
Freeze the ice base in the ice cream maker or by hand method
Step 5:
Just before the freezing is complete, add the caramelized walnuts
Step 6:
Just freeze the finished walnut ice cream for 24 hours in the freezer at -18 degrees
