Delicious, creamy ice cream with amaretto and amaretti pieces and delicious variegto.

Ingredients

Ingredients ice cream:
30g sugar
a pinch of salt
15g Bindemittel-Perfecto
100g Perfecto
40g Perfecto-Minus
30g maple syrup
35g amaretto
490g milk 3,5%
80g condensed milk 10%
110g cream 36% (32%)
70g almond butter
Also:
few amarettis to layer
Ingredients Variegato:
95 g almond paste
70 g amaretto
20 g Variegato perfecto
20 g sugar
30-40 g of water

Preparation

Step 1:
Mix all dry ingredients
Step 2:
Heat dry ingredients, milk and condensed milk to 85 °, hold briefly and then add the remaining ingredients.
Step 3:
Mix in and stir in cream.
Step 4:
Then let the ice cream ripen in the refrigerator for 3-6 hours.
Step 5:
Mix, freeze.
Step 6:
Variegato layer in, I have shredded some amaretti and layered them.
Step 7:
Leave to freeze in the freezer for 24 hours.
Preparation Variegato
Step 1:

Heat the amaretto with water in a small saucepan
Step 2:
Stir in almond paste. Variegato perfecto and stir in sugar.
Step 3:
Bring to the boil while stirring for 1-2 minutes.
Step 4:
Fill into sterilized jars while still hot and close immediately, put a few drops of rum or amaretto on the twist-off lid before closing.
Step 5:
The Variegato must be cold before layering it in the ice.
