I've already tried the Aperol Orange Sorbet and found it very good. The sorbet is perfect, especially on hot summer days or at barbecues. Now I wanted to try Aperol as a cream/milk ice cream. John Patrick McAllistair had already shared the recipe a while ago and had made it a few times, but it was never posted on the website.

Now it is time. I tested his recipe and found it to be very good. Very creamy, with a good melt and a good Aperol taste. Small negative point for me personally ...... I miss the orange note. 🙂 I just think the combination Aperol Orange is much better. The recipe itself is still very good and belongs in the portal.

Ingredients

450g milk 3,5%
175g cream 30%
70g sugar
90g Perfecto Minus
15g binder
1g salt
200g aperole

Preparation

Step 1:
As always, you can mix the dry ingredients first and then mix with the milk for 2 minutes on the highest level.
Step 2:

Add the cream and mix briefly.
Step 3:

If you now add the alcohol and let everything mature a little, the ice machine needs a little longer until the ice is ready.
Step 4:

You can also only put the Aperol in the ice cream machine when the dimensions have already stirred a bit. John stores alcohol in the freezer beforehand. Chilled alcohol or just added in the machine means the ice will freeze faster.
