Delicious apple strudel ice cream! It's mid-September, it's getting noticeably colder, although some warm rays of sun still provide food for our soul. The trees are full of apples and what fits better than a nice recipe with apples.

So yesterday I decided to create a nice apple strudel ice cream. The result is a dream of an ice cream. Very creamy and authentic in taste. It tastes like a nice apple strudel with a scoop of vanilla ice cream.

The recipe is a little more complex, but you will be rewarded with a really great ice cream.

Ingredients

135 g Eis-Perfecto
15 g Bindemittel-Perfecto
70 g butter
60 g egg yolks
a pinch of salt
75 g sugar
100 g apple juice fresh or naturally cloudy
535 milk 3,5%
10 g homemade vanilla paste
Ingredients that are later added to the ice cream
approx. 250 g appleVariegato (prepared with raisins and who also likes some cinnamon)

TIP: The ice cream can also be made without the mini apple strudel ... it tastes better with it, of course.

Preparation

Preparation of mini apple strudel
Step 1:
You will need about 100g of puff pastry or strudel pastry. This should have the size of approx. 25 x 15 cm.
Step 2:
Cover the puff pastry with about 2-3 tablespoons of appleVariegato and roll it up in a vortex. Seal the ends well.
Step 3:
Bake the mini apple strudel at 180 ° C in the oven for approx. 12-15 minutes and cover in the refrigerator for approx. 60 minutes to cool.
Step 4:
Cut the mini apple strudel into small pieces and freeze them for a few hours.
Preparation of apple strudel ice cream
Step 1:
Mix all dry ingredients
Step 2:
Mix the milk, butter, vanilla paste, apple juice, egg yolk and the dry ingredients and bring everything to the boil, stirring constantly, and let it steep for 10 minutes at a low temperature (ideally 85 ° C). Stir occasionally. Be careful that it doesn't burn!
Step 3:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 4:
Now freeze the ice with an ice cream maker or the hand method.
Step 5:
Just before the ice cream is ready, add the frozen mini apple strudel pieces to the ice cream and mix in.
Step 6:
Now fill the finished ice cream in layers into a container and place between each layer of appleVariegato spread out
