This turned into a subtle banana ice cream with caramelized walnuts and pieces of chocolate.
Since bananas always remind me of monkeys, it was given this name.
Creamy, very tasty with a little crunch.
Mix dry ingredients
Whip milk, condensed milk, vanilla pulp and dry ingredients with the Kenny balloon whisk or with a blender
Heat to 40 °, hold briefly, cool
Mash the bananas in a bowl, add to the mixture with maple syrup and mix on the highest level
Then add the cream and mix only briefly
Stir cold in a water bath - ideally put in the refrigerator for 1 hour
Freeze in the ice cream machine - just before the end, sprinkle in the caramelized nuts and chocolate and stir in
Ice removal at -8,5 ° ice temperature
Layer in an ice cream container, sprinkle with caramelized nuts and chocolate if necessary
Let freeze in the freezer for 24 hours. (-18 °)
