Ingredients

55g sugar
1g salt (a pinch is enough)
95g Eis Perfecto
14g binder
45g Perfecto minus
10g lemon juice
490g blood orange juice, freshly squeezed
75g milk
185g cream 36% (also works with 32%)
30g condensed milk 10%, unsweetened
Ingredients Variegato
75g blood orange juice (puree)
35g Variegato perfecto
20g sugar
10g lemon juice

Preparation

Step 1:

Mix dry ingredients
Step 2:

Heat milk, condensed milk and dry ingredients to 50°, hold briefly
Step 3:

Blend on high for 1-2 minutes
Step 4:

Then add lemon juice and blood orange juice, mix again for 1 minute
Step 5:

Then add the cream and mix briefly
Step 6:

Leave to mature in the refrigerator for 3-6 hours

Freeze in the ice cream machine, removal at -8 to -8,5°, when layering in the container possibly Variegato layer in

Freeze for 24 hours in the freezer at a maximum of -18°

Step 1:

Mix all dry ingredients and bring to the boil together with the orange juice (puree) and lemon juice for approx. 1-2 minutes
Step 2:

Pour hot into sterilized jars, seal immediately and allow to cool completely before use.
