Very intense blueberry sorbet with 71% fruit. The ingredients of the sorbet are based on the very intense raspberry sorbet by Nici, except that it is made with blueberries and cremosa and triggers a real taste explosion, very tender and creamy melt, it almost disappears in the mouth.

Ingredients

130 g Sorbet Perfecto powder
pinch of salt
145 g sugar
690 g blueberries
20 g lemon juice
15 g Perfecto Bindemittel
3 g Cremosa paste from the Movito Shop

Preparation

Step 1:
Wash the blueberries and let them dry well
Step 2:
Weigh all dry ingredients, mix
Step 3:
Prepare lemon juice
Step 4:
Put the blueberries in the glass blender and mix for at least 10 minutes, until everything is fine
Step 5:
Now add all the dry ingredients to the blueberry puree plus the lemon and mix well for two minutes
Step 6:
Let ripen for at least 3 hours (me overnight)
Step 7:
Put all the liquid back into the mixer, add the 3 g cremosa and mix for 30 seconds
Step 8:
Freeze with the ice cream maker or hand method
Step 9:
Transfer the finished ice cream to a suitable freezer container and let it freeze at -18 degrees in the freezer for 24 hours
