Caramelized figs

Cut the figs into small pieces

Caramelize the cane sugar in a pan

Add the figs and caramelize at approx. 3/4 heat until the mixture has turned really dark brown. Always stir well so that nothing burns.

Deglaze with the rum.

The Variegato-Perfecto add and stir in quickly so that it doesn't clump together.

Now add water, honey, orange peel and lemon peel and bring everything to the boil again.

Continue to simmer on low heat until it has a nice creamy texture.

Season to taste with rum and honey

Let cool down.
