Very creamy, intense taste. Milk based ice cream.
Peel the carrots, chase through the slow juicer, finely puree some of the marc (weigh out) with some of the weighed milk in the spice grinder. (or hand blender)
The marc and the juice from the slow juicer should weigh a total of 465g!
Mix dry ingredients.
With milk and carrot mix, heat to 85 °, simmer for 2 minutes, mix well, cool slightly. Mix on the highest level for 2 minutes.
Add the cream, mix briefly.
Cool in a water bath.
Leave to mature in the refrigerator for 3-6 hours.
Mix, freeze in the ice cream maker.
