To make our ice cream taste like a freshly baked cherry crumble cake, we use an ingenious combination of Butter Cookie Ice Cream Paste, Marzipan ice cream paste (alternatively you can also use almond baking flavour) and a Vanilla ice cream paste of your choice. The butter biscuit note brings the typical crumble cake taste into play, while the marzipan aroma adds a fine almond nuance - perfectly matched with the vanilla ice cream base.

Ingredients

120 g Eis-Perfecto
15 g Bindemittel-Perfecto
70 g sugar
445 g milk 3,5%
220 g cream 30%
10 g butter biscuit ice cream paste
5 g marzipan ice cream paste (alternatively: some almond baking flavor)
15 g vanilla ice cream paste
pinch of salt
Ingredients that are later added to the ice cream
50 g almond flakes (10 g sugar + 5 g butter)
200 g cherry Variegato
80 g Cookie Crumble Mix

Preparation

preparations:
Step 1:

For the almond flakes, slightly melt the sugar in a non-stick pan.
Step 2:

Add butter and flaked almonds and caramelize everything until golden brown.
Step 3:

Spread the mixture on baking paper and let it cool.
Step 4:

Now prepare the cookie crumble according to the recipe and mix with the caramelized almond flakes.
Making ice cream
Step 1:

Mix all dry ingredients.
Step 2:
Mix the milk, ice cream pastes and the dry ingredients together at the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Freeze the ice with an ice cream maker or the hand method.
Step 6:
Pour the finished ice cream into a container in layers.
Step 7:

Between each layer the cherryVariegato and spread the rich almond flakes-cookie crumble mixture and swirl lightly with a spoon.
