Ingredients

500 g pitted cherries (fresh or frozen)
120 g sugar
180 g of water
40 g lemon juice
145 g Sorbet-Perfecto
15 g Bindemittel-Perfecto
a pinch of salt
Important notes
With frozen cherries, please make sure that they are unsweetened.

Preparation

Step 1:
Wash fresh cherries, purée the stones and briefly bring to the boil.
Step 2:
Mix all dry ingredients.
Step 3:
Mix 500 g of cherry puree with the lemon juice and water.
Step 4:
Add the dry ingredients and mix everything at the highest level for 2 minutes.
Step 5:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 6:
Now freeze the ice with an ice cream maker or the hand method.
