Mix all dry ingredients.
Mix the cherries, lemon juice and dry ingredients well in a saucepan and bring to the boil for 2-3 minutes while stirring
Then turn the temperature down a little and let it simmer for another 15 minutes.
Let cool down.

Then add the sour cherries and bring to the boil again briefly and then simmer for 10 minutes.
Let cool down.
The cherry varigato should be left to steep for 24 hours before use.
After preparation, pour the Varigato into sterilized jars while it is still hot and seal them immediately. This will keep the Variegato a few weeks.

Yes, that would work, but fresh and frozen cherries taste better.
