Mix all dry ingredients.
Mix the pureed cherries, lemon juice and dry ingredients well in a saucepan and bring to the boil for 1-2 minutes
Then add the sour cherries and bring to the boil again briefly and then simmer for 10 minutes.
Let cool down.
The cherry varigato should steep for 24 hours.

Yes, that would work, but fresh and frozen cherries taste better.
