Delicious chestnut ice cream, I buy ready-made chestnut puree for it in Hungary.

But you could also buy plain chestnut puree, add a spoonful of sugar and a dash of rum to taste.

Ingredients

380 g whole milk 3,5%
95 g cream 36% (30% also works)
155 g chestnut puree (Hungary) can also be used igloo etc., with natural puree add 1 spoonful of sugar and a dash of rum, stir.
60 g Eis-Perfecto
12 g Bindemittel-Perfecto
40 g sugar
a pinch of salt

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Heat to 85 °, hold briefly, cool a little, add chestnut puree, mix.
Step 4:
Add the cream and mix again briefly.
Step 5:
Let the mix mature in the refrigerator for at least 3-6 hours
Step 6:
Mix, freeze, just before the ice cream is done, add the glazed chestnuts and stir in.
Step 7:
Possibly chestnuts Variegato layering.
