Ingredients

560g whole milk 3,5%
100g cream 30%
210g praline chocolate
85g Eis Perfecto
30g Perfecto More
15g Perfecto binder
pinch of salt

Preparation

Step 1:
Mix the dry ingredients together well
Step 2:

Coarsely chop the praline chocolate and melt it in the whole milk
Step 3:

Heat the chocolate milk with the dry ingredients to 65 degrees and hold the temperature for 15 minutes. Stir occasionally
Step 4:

Mix the ice cream base for two minutes on the highest setting
Step 5:

Now add the cream and mix again for 30 seconds on a low level
Step 6:

Let the ice base cool completely
Step 7:

Let the ice base mature in the refrigerator for three to six hours
Step 8:

Freeze with the ice cream maker or the hand method
Step 9:
Pour the finished ice cream into a suitable freezer container and freeze it in the freezer at -18 degrees
