Very creamy raspberry ice cream with fruit puree from Ponthier.
Optionally, you can also add a raspberry Variegato be layered.

Ingredients

155g Perfecto Ice powder
100g condensed milk 10%
100g cream 30%
80g milk 3,5%
30g lemon juice
520g raspberry fruit puree from Ponthier
(Alternatively you can use 468 g raspberries and 52 g more sugar)
15g Perfecto binder
pinch of salt

Preparation

Step 1:
Mix all dry ingredients together well
Step 2:
Mix the milk, lemon juice, condensed milk, fruit puree and the dry ingredients for 2 minutes at the highest level
Step 3:
Add the cream and mix again briefly on a medium setting
Step 4:
The ice base to ripen in the refrigerator for 3 hours
Step 5:
The ice base to freeze in the ice machine
Step 6:
After approx. 60 minutes it is ready and can be frozen in the freezer (approx. 24 hours)
