Creme brulee ice cream

Crème brûlée ice cream, named after the dessert of the same name. In terms of taste, it has a slight hint of vanilla / caramel.

Step 1:
Flambé the brown sugar with a flambé burner
Step 2:
After cooling, place in a freezer bag, mince with a rolling pin and set aside
Step 3:
Mix all dry ingredients including 45g of the caramelized sugar.
Step 4:
Briefly mix in the milk, cream, egg yolk and vanilla paste
Step 5:
Heat at 85 degrees for 2 minutes.
Step 6:
Let the base mature in the refrigerator for at least 6 hours.
Step 7:
Stir well
Step 8:
Freeze the ice cream with an ice cream maker or by the hand method
Step 9:
Just before the ice cream is ready, add some of the brown sugar
Step 10:
Now fill the finished ice cream in layers into a container and distribute some of the caramelized sugar between each layer.
Step 11:
If you want, you can put some brown sugar on it after freezing it for a short time
