Flambé the brown sugar with a flambé burner

Mix all dry ingredients including 45g of the caramelized sugar.
Briefly mix in the milk, cream, egg yolk and vanilla paste
Heat at 85 degrees for 2 minutes.
Let the base mature in the refrigerator for at least 6 hours.

Freeze the ice cream with an ice cream maker or by the hand method
Just before the ice cream is ready, add some of the brown sugar
Now fill the finished ice cream in layers into a container and distribute some of the caramelized sugar between each layer.
If you want, you can put some brown sugar on it after freezing it for a short time
