Ingredients

610 g of water
130 g Perfecto-More
15 g Bindemittel-Perfecto
95 g sugar
75 g dark couverture
75 g of cocoa
pinch of salt
Optional 5g CremosaPerfecto

Preparation

Step 1:
Bring the cocoa and the coarsely chopped couverture to the boil with the water and simmer gently for 2-3 minutes.
Step 2:
Mix the remaining dry ingredients.
Step 3:
Mix the chocolate water and the dry ingredients together on the highest setting for 2 minutes.
Step 4:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice with an ice cream maker or the hand method.
