Ingredients

680 g whole milk 3,5%
140 g dark chocolate 75%
120 g Perfecto-More
10 g Bindemittel-Perfecto
30 g sugar
20 g vanilla sugar
20 g of cocoa
pinch of salt

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Roughly chop the chocolate.
Step 3:
Mix the milk and the dry ingredients and bring everything to the boil together with the chocolate, stirring constantly, and let it steep for 15 minutes at a low temperature (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 4:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice with an ice cream maker or the hand method.
