Very creamy dark stracciatella ice cream ?
Mix dry ingredients
Mix the milk, vanilla paste, egg yolk and dry ingredients and bring everything together with the chocolate to the boil, stirring constantly, and let it steep for 10-15 minutes at a low temperature (ideally 85 degrees). Stir occasionally. Be careful not to burn it.
Let the finished ice base mature in the refrigerator for at least three hours.
Freeze with the ice cream maker or the hand method
Melt the dark chocolate in a double boiler
Just before the end of the freezing process, let the melted chocolate trickle in
Just pour the finished ice cream into a freezer and freeze it in the freezer at -24 degrees for 18 hours
