You already liked our first version of the Dubai chocolate ice cream. In the first version we had chocolate ice cream with pistachiosvariegato and crispy angel hair. And now we proudly present the second variation: Dubai Chocolate Pistachio Ice Cream.

What's special about this new version? This time the base is a creamy pistachio ice cream. This is refined with rich chocolate and the aromatic dough threads that are affectionately known as "angel hair". The whole thing results in a taste experience that is reminiscent of the luxurious and intense sweetness that real Dubai chocolate is known for.

This demand motivated us to select the best ingredients and create this ice cream specialty with great attention to detail.

The basis of our Dubai Chocolate Pistachio Ice Cream is a wonderfully creamy pistachio ice cream. Pistachio paste from the shop or homemade according to our recipe "Make your own nut pastes" gives the ice cream base an intense nutty note and provides the rich green colour that fans of Dubai chocolate love so much. The highlight of this recipe are the two Variegato-Mixtures that make the ice cream the perfect experience: The Crema Cioccolato Variegato from the shop or homemade according to our recipe chocolate Variegato basic recipe (in the dark chocolate version) give the ice cream depth and offer an ideal combination with Crema Pistacchio Variegato (Crema Pistacchio Variegato moveto from the shop or homemade according to ours Nut Variegato basic recipe) with incorporated roasted angel hair and chocolate chips, which we also make ourselves.

Our angel hair dough threads, also known as Kadayif, give the ice cream a crunchy texture that makes every spooning experience special. The idea for this special ice cream creation came about when we became aware of the increasing hype surrounding Dubai chocolate. More and more people were raving about this delicious dessert. So it was only a matter of time before the first ice cream parlors adopted it as an ice cream flavor. The price for a scoop of ice cream is similar to other Dubai chocolate products, simply because demand is so extremely high. Of course, we didn't want to be left behind and so we developed our very own interpretations - inspired by the original chocolate, but of course always with our own personal touch.

Our first version of Dubai chocolate ice cream was a real success. With the combination of chocolate base, pistachiosvariegato and angel hair, we brought the intense taste experience straight into the freezer. But the wishes of our loyal customers - the "Eisis", as we affectionately call them - did not let us rest. And so the second variation was born: Dubai Chocolate Pistachio Ice Cream, in which the pistachio sets the tone, but the typical elements of Dubai chocolate are still retained.

Ingredients

60 g Eis-Perfecto
50 g Perfecto-More
15 g Bindemittel-Perfecto
90 g sugar
100 g pistachio paste
595 g milk 3,5%
90 g cream 30%
pinch of salt
optionally 5g Perfecto-Cremosa
Ingredients that are later added to the ice cream
150 g Crema Cioccolato Variegato Movito or homemade Crema chocolateVariegato Dark variant
Ingredients pistachios Variegato
160 g Crema-Pistacchio Variegato Movito or homemade Crema Milk-Nut Variegato
Optional 15 g tahini sesame paste
30 g Kadayif dough threads - angel hair
20 g roasted chopped pistachios

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the dry ingredients together with the milk and pistachio paste at the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Freeze the ice with an ice cream maker or the hand method.
Step 6:

Now fill the finished ice cream into a container in layers, placing the pistachio nuts between each layer.Variegato mixture and then the Crema-Cioccolato Variegato distributed and lightly marbled.
Preparation of pistachioVariegato
Step 1:
Fry the Kadayif dough threads angel hair in butter until golden brown and crispy and allow to cool.
Step 2:

Add roasted angel hair, tahini and roasted pistachios to the Crema-Pistacchio Variegato moveto (or homemade according to our Cream milk nut Variegato basic recipe) mix.
