It is “hit and miss” to get fresh, aromatic figs and that's why I prepared this ice cream with canned figs.
The ice cream is very fruity, creamy and has a delicate melt.
If the ice cream is made with fresh figs, the figs must be boiled so that the ice cream does not become bitter.

I made this ice cream exactly according to the recipe. However, I used fresh figs. The mixture was then left in the fridge for 15 hours. The taste test in front of the fridge was very good. But now it tastes very bitter. What did I do wrong?

It could be that the bitter substances in the fig seeds have dissolved because they have been standing for so long.

I made it with fresh figs – boiled briefly and then pureed.
I have to say, I find it very tasty. It's something different 😊
A little softer could be a good idea.
