Ingredients

140 g Eis-Perfecto
15 g binderPerfecto
30 g butter
a pinch of salt
24 g vanilla sugar
30 g sugar
540 g milk 1,5%
200 g cream 30%
20 g homemade vanilla paste
Ingredients that are later added to the ice cream
250 g currantVariegato or currant jelly
75 g cocktail cherry, roughly chopped
50 g almond or hazelnut brittle
50 g shortbread pieces

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, vanilla paste and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Now add the butter to the boil briefly and mix briefly.
Step 4:
Now add the cream and mix again briefly
Step 5:
Cool down in the cold water bath.
Step 6:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 7:
Now freeze the ice with an ice cream maker or the hand method.
Step 8:
Just before the ice cream is ready, add the butter biscuit pieces, brittle and cocktail cherry and stir in.
Step 9:
Now fill the finished ice cream in layers into a container and place between each currantVariegato or layer currant jelly.
