Fruity cream ice cream basic recipe. The basic recipe is for a creamy ice cream with fruit.

Note:
Some fruits like kiwis, pineapple and papaya need to be heated beforehand, otherwise the milk will become bitter. This is ensured by the enzymes contained in the fruit.

Ingredients

100 g Eis-Perfecto
30 g Perfecto-More
15 g Bindemittel-Perfecto
80 g sugar
350 grams of fruit
220 g cream 30%
203 g milk 3,5%
2 g citric acid

130 g Perfecto-X

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, fruit and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Freeze the ice with an ice cream maker or the hand method.
