I love this mix of fresh lemon and delicate cake flavor – absolutely unique and wonderfully nostalgic! Through our Cookie ice cream paste from Movito, which is reminiscent of a fluffy sponge cake, your lemon flavor becomes a “Grandma’s Lemon Cake Ice Cream” highlight. Lemon Cake (Lemon Cookie) Variegato is swirled in – for a true cake-in-ice-cream moment. The yellow food coloring makes it visually perfect; optionally, crunchy chocolate pieces can be added for more contrast.

Ingredients

140 g Eis-Perfecto
15 g Bindemittel-Perfecto
65 g sugar
535 g milk 3,5%
170 g cream 30%
50 g cookie ice cream paste Movito
25 g lemon juice
80-100 drops of Movito Lemon Essence
some yellow food coloring
pinch of salt
OPTIONAL 5g Perfecto-Cremosa
Variant without sugar
130 g Perfecto-X
15g XBindemittel-Perfecto
75 g xylitol
535 g milk 3,5%
170 g cream 30%
50 g cookie ice cream paste Movito
25 g lemon juice
80-100 drops of Movito Lemon Essence
some yellow food coloring
pinch of salt

Ingredients that go into the ice cream later
200 g lemon cake Variegato
OPTIONAL 30g chopped chocolate

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Blend the milk, lemon essence, lemon juice, ice cream paste and dry ingredients together on high for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:

Now add enough yellow food coloring until it has a nice yellow color
Step 5:

Let the mix mature in the refrigerator for at least 60 minutes.
Step 6:
Freeze the ice with an ice cream maker or the hand method.
Step 7:
Now fill the finished ice cream in layers into a container and between each layer that Variegato spread and swirl gently with a spoon.

Step 1:

The lemon essence can be increased or decreased according to taste.

If you like, you can add chopped chocolate to the ice cream just before you take it out of the ice cream machine
