I experimented a bit, the request for “Jolly” ice lollies came from Claudia Kraft, but in a strawberry-pineapple version.

The original Jolly is made with pineapple and raspberry.

So I did various experiments.

This variant is made without an ice machine.

For the time being, I only made 1/4 of the recipe amount for testing.

Conclusion: tastes delicious, very successful, will be repeated!

Ingredients

650g fresh pineapple, weighed according to slow juicer (I used cans of pineapple)
205g Sorbet perfecto
15g Bindemittel perfecto
50g cane sugar
80g lemon juice

195g Sorbet perfecto
15g Bindemittel perfecto
680g raspberries (weighed according to the slow juicer)
50g cane sugar
70g lemon juice
Ingredients Schoko Eisfix
100g coconut oil not hardened
100g whole milk chocolate couverture (or other)

Weigh all ingredients
Step 2:
I chased pineapples through the slow juicer because the coarse fibers in the ice bother me, but 650g should remain
Step 3:
Also chasing raspberries through the slow juicer, doesn't like stones in the ice cream, but 680g should be left over
Step 4:
Put liquid and dry ingredients for each type of ice cream in the blender / glass mixer and mix on the highest level for 2 minutes
Step 5:
Let ripen in the refrigerator for 1-3 hours
Step 6:
Then mix briefly
Step 7:
I poured both types into Schnabel measuring cups and at the same time filled the ice cream molds from two sides
Step 8:
Freeze in the freezer at -18 ° for about 24 hours
Step 9:
Then cover the upper part (upper 1/3) with Eisfix chocolate.
Preparation of chocolate ice cream
Step 1:
Heat both ingredients in the Cooking Chef (or on the stove with a thermometer) to a maximum of 37 °, stir for approx. 5 minutes
Step 2:
Fill into dosing bottles
Step 3:
Do not store in the refrigerator
Step 4:
Gets hard on the ice immediately, just a few seconds!
