Delicious - creamy - Perfecto

Anyone with a sweet tooth who likes creamy ice cream will not be disappointed. The ice cream is very creamy and full-bodied. The lemon curd flavor is for us Perfecto. To intensify it a bit, I whipped in the lemon curd ice cream with pure lemon curd shortly before the end of machine time (amount as desired) For an even creamier texture, I used our Cremosa in this lemon curd ice cream. However, this is only optional and not absolutely necessary. But it adds a little extra creaminess to the ice cream.

Ingredients

Ingredients ice cream
20g lemon juice
50 g cream 30%
525 g whole milk 3,5%
15g Bindemittel Perfecto
110 g Eis-Perfecto
30g plus Perfecto
250g lemon curd
Ingredients lemon curd
2 lemons, organic or of course amalfi lemons
100 butter
200 g icing sugar
3 eggs (size M)

Preparation

Step 1:

Mix all dry ingredients.
Step 2:
Mix the milk, lemon curd, lemon juice and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 4:
Then add the cream and mix in briefly

Freeze the ice with an ice cream maker or the hand method.
Step 5:

Tip:: You can also have lemon curd like a Variegato roll into the ice.
Preparation of lemon curd
Step 1:

Wash the organic lemon with hot water, rub dry and finely grate the peel.
Step 2:
Then squeeze out the juice of both lemons.
Step 3:
Put butter, sugar, lemon zest and juice in a saucepan and melt over low heat while stirring.
Step 4:
Whisk the eggs in a bowl and stir into the butter and lemon mixture. Heat everything while stirring until a thick, creamy mass is formed. I got 100 degrees because I did it in my machine
Step 5:
Pour the finished lemon curd into clean jars while it is still hot, close immediately
