Delicious and very creamy Malaga ice cream recipe. Malaga ice cream is a classic in ice cream parlors. So, of course, it shouldn't be missing in our ice cream recipe collection. With our Malagaeis recipe, we manage completely without any flavorings. Instead, we use Malaga wine, rum and marsala in our Malaga recipe. Therefore the ice cream is only for our big ice cream lovers. But that never matters. Because there are of course many ice cream recipes for our little ice cream lovers.

Ingredients

420 g whole milk 3,5%
220 g cream 30%
100 g condensed milk 10%
105 g Eis-Perfecto
15 g Bindemittel-Perfecto
50 g sugar
10 g homemade vanilla paste
40 g of Malaga syrup
40 g of malague wine
a pinch of salt
Ingredients that are later added to the ice cream
50 g of Malaga raisins

Preparation

Making ice cream
Step 1:
Mix all dry ingredients
Step 2:
Mix the milk, condensed milk, Malaga syrup, vanilla paste and the dry ingredients together on the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly and let it steep for 10 minutes at a low temperature (ideally 85 ° C) while stirring constantly. Stir occasionally. Be careful not to burn it!
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes and add the Malag raisins just before the ice cream is ready.
Manufacture of Malaga syrup and raisins
Step 1:
Bring 100 g water and 100 g sugar to the boil in a new saucepan and cook for 2 minutes.
Step 2:
Add 150 g raisins (please wash several times with hot water) and 35 g Malaga wine, 35 g Marsala wine and 45 g rum and mix well.
Step 3:
Leave the whole thing in an airtight container in the refrigerator for at least 4 days.
