Milk ice cream with Variegato with self-candied limes.
Add fresh mojitomint leaves to the milk (a little more milk loss) and cook everything together for about five minutes, then cool in a cold water bath.
Leave to mature in the refrigerator for 6-12 hours.
Strain, add a few mint leaves and pass through a fine sieve with the mortar pestle.
Mix dry ingredients, mix with the milk mixture, condensed milk, lime juice and syrup.
Then add the cream, mix briefly.
Leave to mature in the refrigerator for 3-6 hours.
Mix, freeze.
Mix all dry ingredients and, together with the lime juice and candied limes, bring to the boil for approx. 1-2 minutes and simmer gently over low heat for 2-3 minutes.
Numbers in parentheses is smaller amount Variegato!!
Rub limes with oil, wash with hot water, brush off.
Squeeze juice, can be used for other things.
Cut off the ends, cut the rest into thin strips.
Put in a saucepan with cold water, bring to the boil, pour off the liquid, rinse with cold water.
Repeat all of this again.
Then let the water and sugar warm up in the Kenwood CC bowl, add the quenched lemon wedges, bring to the boil. (approx. 120 °)
Let simmer gently for about 4-6 hours over moderate heat (80-90 °).
Bowls become jelly-like!
