Ingredients

40 g Eis-Perfecto
60 g Eis-Perfecto-More
15 g Bindemittel-Perfecto
40 g egg yolks
75 g sugar
40 g of cocoa
30g whole milk couverture
60 g condensed milk 10%
570 g whole milk 3,5%
70 cream 30%
25 Mon Cheri

Preparation

Step 1:
Mix all dry ingredients
Step 2:
Mix with milk, sugar, couverture, cocoa powder, condensed milk and egg yolk and simmer at 85 degrees for 10 minutes
Step 3:
25 Carefully stir in the Mon Cherie and the cream
Step 4:
Let ripen in the refrigerator for at least 60 minutes
Step 5:
Make the ice cream with the ice cream maker or hand method
Step 6:
Shortly before the end, chop up the 10 Mon Cherie and add to the ice cream mixture.

Very chocolaty, the alcohol from Mon Cherie comes through delicately. I would increase the plus amount because it's super soft. Otherwise very intense and creamy 👍🏻
