Nougat ice cream par excellence! I love nougat, my wife loves nougat, my kids love nougat. I think everyone loves nougat. This great taste of nuts and the tender melt on the tongue is simply MEGA delicious.

Of course, I have no choice but to make an ice cream of the same quality out of it. The nougat ice cream is creamy and the nougat comes across as very tasty.

But I wanted a little more whistle in the ice. That's why I layered roasted hazelnuts and a Kramalle cream in the ice cream. But that's not a must! Because the ice cream tastes fantastic even without these extras.

Ingredients

90 g Perfecto-More
15 g Bindemittel-Perfecto
a pinch of salt
180 g nut nougat
615 g milk 3,5%
50 g Mascarpone
50 g condensed milk 10%
(As an alternative to condensed milk, 50% milk / 50% cream | The ice cream becomes creamier with condensed milk!)
Ingredients that are later added to the ice cream
200 g cream and caramel cream
50-70 g lightly toasted hazelnuts

Preparation

Step 1:
Mix all dry ingredients.
Step 2:

Mix the milk, mascarpone, condensed milk and the dry ingredients and mix everything together on the highest level for 2 minutes.
Step 3:

Now add the nougat and briefly bring the ice cream mix to the boil, stirring constantly.
Step 4:

Mix again briefly
Step 5:

Cool down in a water bath and then let ripen in the refrigerator for at least 60 minutes.
Step 6:
In the meantime, roughly chop the roasted hazelnuts and mix with the cream and caramel cream.
Step 7:

Now freeze the ice with an ice cream maker or the hand method.
Step 8:
Now pour the finished ice cream into a container in layers and distribute it between each layer of cream and caramel cream and nut mixture
