Delicious, fruity, very creamy.
This time I have it with peach Variegato done, next time I'll test it with gooseberryVariegato.

A slightly sour note could also taste delicious.

Ingredients

Ingredients ice cream
55g sugar
1g salt
70g Eis perfecto
55g Perfecto more
14g Perfecto binder
175g cream 36%
95g milk 3,5%
260g gooseberries, deseeded, weighed puree
Weighed 260g peaches, pitted, pureed
15g lemon juice
Ingredients Variegato
80g gooseberries, deseeded, weighed puree
30g Variegato perfecto
20-25 sugar
7-10g lemon juice

Preparation

Making ice cream
Step 1:
Chasing gooseberries through the slow juicer because of the kernels
Step 2:
Puree the peaches in the blender
Step 3:
Mix dry ingredients
Step 4:
Heat briefly with milk to 85 °, cool a little
Step 5:
Add both fruit puree and lemon juice, stir, mix on the highest level for 2 minutes
Step 6:
Add the cream, mix briefly
Step 7:
Cool in a water bath
Step 8:
Let ripen in the refrigerator for 3-6 hours
Step 9:
Mix, freeze
Step 10:
Possibly with Variegato layers.
Preparation Variegato
Step 1:
Mix all dry ingredients and bring to the boil together with the pureed fruits and lemon juice for approx. 1-2 minutes
Step 2:
Fill immediately into sterilized jars, close.
Step 3:
The Variegato should be refrigerated before use
Step 4:
It is best to prepare a day in advance.
