Ingredients

130 g Eis-Perfecto
15 g Bindemittel-Perfecto
95 g caramelized sugar (needs about 115g sugar)
520 g milk 3,5%
240 g cream 30%
pinch of salt
Optional 5g Perfecto-Cremosa
Ingredients that go into the ice cream later
150g-200g peanutVariegato (Nut-Variegato- basic recipe)
50g salted and caramelized peanuts

Preparation

Step 1:
Caramelize the sugar in a coated pan with a sip of water until golden brown and leave to cool on baking paper.
Step 2:

Peanut-Variegato Mix with the salted and caramelized peanuts

Mix the remaining dry ingredients.
Step 3:

Mix the milk, caramelized sugar and dry ingredients together on the highest setting for 2 minutes.
Step 4:

Now add the cream and mix again briefly.
Step 5:

Heat everything together to around 85 ° C, stirring constantly, and let it steep for a moment. Stir occasionally. Be careful not to burn it!
Step 6:

Cool down the ice cream mix in a cold water bath and let it mature in the refrigerator for at least 60 minutes.
Step 7:

Now freeze the ice with an ice cream maker or the hand method.
Step 8:
