Very fruity and creamy, I like to drink Pina Colada, so I had to come up with an ice cream with this taste.

Caribbean taste, really tasty.

The Variegato completes the taste.

Pineapple with cream gets bitter!!

Therefore proceed as follows:

Mix dry ingredients, add coconut milk, heat to 85°, hold for a few seconds, cool
Step 4:

Add the cream, mix briefly and leave to mature in the fridge for 3-6 hours
Step 5:

Puree the pineapple, cook for approx. 2 minutes, cool (refrigerate)

Then add to the matured mix, mix briefly again, add Cremosa paste if necessary and freeze immediately in the ice cream maker
Step 7:

Shortly before the end, stir in the Pina Colada

Ice removal at -8° – 8,5° ice temperature (measure with food stick thermometer)

Pour into a freezer container and Variegato swirl under

Freeze for 24 hours in the freezer at -16° to -18°

Mix the dry ingredients, bring to the boil with the fruit puree for 2-3 minutes, stir with a whisk so that nothing burns

Shortly before the end, add the Pina Colada, stir, pour into clean glasses and close
