A super delicious ice cream based on Monin praline-nut syrup and with brittle for a nice crunch.
Mix the dry ingredients together well.
Mix all ingredients with the exception of the cream on the highest setting for 2 minutes.
Add the cream and mix on 20/30 speed for 1-3 seconds.
Let the ice cream mix mature for at least 1 hour.
Stir the ice cream mix with the whisk and then pour it into the ice cream maker.
Just before the ice cream in the machine is ready, add the brittle to the machine.
