Here I have a very tasty Rocher ice cream for you. The ice cream is very nice and creamy again. I had made the ice cream for the holidays. Our guests and we were very enthusiastic.

With this ice cream we make a relatively neutral ice cream base with a hint of vanilla and an intense Rocher Variegato. The combination is just fantastic. Ice cream very tasty ice cream.

Ingredients

555 g milk 3,5%
150 g cream 30%
40 g egg yolks
15 g Bindemittel-Perfecto
150 g Eis-Perfecto
80 g sugar
15 g vanilla paste
a pinch of salt
Ingredients that are later added to the ice cream
250 g - 300 g RocherVariegato

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, vanilla paste, egg yolks and the dry ingredients for 2 minutes on the highest setting.
Step 3:
Add the cream and heat everything together, stirring occasionally, and let it steep for 10 minutes at 85 ° C. Be careful not to burn it!
Step 4:
Cool the mix in a water bath and then let it mature in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice with an ice cream maker or the hand method.
Step 6:
Now fill the finished ice cream in layers into a container and place Rocher-Variegato to distribute.
Step 7:
When everything is in the box, add a wide spoon or spatula to the mixture 2-3 times in different places and turn the spoon to whirl the whole thing a little.
