Schöferhofer grapefruit sorbet

The after-work beer äääähhh -ice cream on hot summer days, ideal as a supplement, for example after a barbecue.

Ingredients

100 g sugar
55 g Sorbet-Perfecto
120 g Perfecto-Minus
20 g Perfecto-Binder
700 g Schöfferhofer grapefruit
4 g citric acid
Lemon zest from an organic lemon
pinch of salt
Optional 5 g Cremosa Perfetco
Optional some food coloring, without it it will be very light.

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the Schöfferhofer grapefruit, lemon zest and dry ingredients together at the highest setting for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 4:
Freeze the ice with an ice cream maker or the hand method.

Instead of Schöfferhofer Grapefruit, I use the Granini Pink Grapefruit, which contains a lot of grapefruit flesh, which gives the sorbet that little bit extra. No dye is needed.
