Ingredients

Ingredients ice cream
120g Perfecto X
410g sour cream (10%)
250 g whole milk 3,5%
95g cream 30%
95 g xylitol
15g X Bindemittel-Perfecto
15g lemon juice
pinch of salt

250g frozen cherries pureed
120g Variegato X Perfecto
90 g xylitol
20g lemon juice

Preparation

Making ice cream
Step 1:
mix all dry ingredients together
Step 2:
Blend the dry ingredients, milk, lemon juice and sour cream on the highest setting for two minutes
Step 3:
Add the cream and mix again briefly on a medium level
Step 4:
let it rest in the fridge for at least three hours
Step 5:
Mix the ice base again and freeze with the ice cream maker or the hand method
Step 6:

Step 1:
Mix dry ingredients
Step 2:
Mix the dry ingredients, mashed cherries and lemon juice in a saucepan
Step 3:
