Stracciatella ice cream is a classic. Here is a super delicious and creamy stracciatella ice cream recipe with chocolate chips.

Ingredients

540 g whole milk 3,5%
110 g cream 30%
50 g Kondensmilch
30 g egg white (1 egg white)
145 g Eis-Perfecto
15 g Bindemittel-Perfecto
50 g white couverture
40 g sugar
16 g vanilla sugar
pinch of salt
Ingredients that are later added to the ice cream
120 g dark couverture chips (you can also use chopped couverture, but I think it's better with the chips)

Method

Step 1:
Mix all dry ingredients
Step 2:
Mix the milk, condensed milk, egg white and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly, then add the white chocolate and leave to steep for 5 minutes at a low temperature (ideally 85 °C) while stirring constantly. Stir occasionally. Be careful not to burn it!
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice cream with an ice cream machine or the hand method and just before the ice cream is ready, add the chocolate chips and stir in.

Hello
Like all recipes, that sounds delicious. The chocolate ice cream is already the basis and favorite for some variations.
If I replace the protein in the recipes with dry powder, do I still have to let the mixture simmer?

Hi Sandra,

Should work ... You don't have to reheat protein powder ... Because it's already pasteurized. However, you have to mix it with water first or add the necessary amount of water so that it corresponds to the amount of fresh protein.

Today it was my first ice cream with the perfcto powders. The ice cream is really delicious, I made it with dark chocolate. Definitely not the last time.

Very good balanced taste with a fine creaminess.
As a tip: I don't make the chocolate pieces on paper, I take a good, high-quality dark chocolate, melt it in a water bath and then let the sauce run into the stracciatella shortly before the end, which results in very fine, delicate crispy chocolate pieces with the crunch and everyone thinks that like in the ice cream parlor.
