I love strawberry ice cream – and I've loved it long before I started making my own. Strawberry sorbet was always my first choice at the ice cream parlor. Fruity, refreshing, and with a very special lightness – for me, it's simply the epitome of summer!

I've tried what feels like a thousand strawberry ice cream recipes. Many of them were great – and my favorite so far has been super creamy strawberry sorbetBut with the Strawberry Avocado Sorbet, I've seriously found a new favorite.
Creaminess in a whole new way
What makes this sorbet special is the avocado. Don't worry—it doesn't dominate the flavor. The fruitiness of the strawberry remains clearly in the foreground. But the avocado creates an incredibly creamy, almost creamy texture. The ice cream feels incredibly soft and round in the mouth—without any cream involved.
