Fruity, creamy strawberry ice cream with pieces of meringue and strawberry Variegato.

First prepare meringues according to the recipe and let them dry in the oven!
Wash the strawberries, remove the greens and quarter them. (take a little more, as some falls off)
I always put the berries through the slow juicer, I don't like seeds! (there must be 450g left)
Mix with approx. 20g sugar and lemon juice and set aside.
In the meantime, stir all dry ingredients, heat with milk to 85 °, hold briefly, cool slightly.
Add the pureed strawberries to the ice cream mixture, mix on the highest level for 2 minutes.
Then add the cream, mix briefly.
Leave to mature in the refrigerator for 3-6 hours.
Mix, freeze.
Carefully crumble the meringues into large pieces or quarter them with a knife (they will crumble a bit).
Take the ice cream out of the ice cream machine and layer 3/4 of the meringue under the ice cream mass, distribute the rest on top of the ice cream.
Definitely strawberry Variegato layering.
Preheat the oven to approx. 110 ° and cover the baking tray with baking paper.
Beat the egg whites (preferably at refrigerator temperature) with salt in the Kenwood bowl with a mixer.
Add about 3–4 teaspoons of sugar, beat briefly and gradually add the remaining sugar. Mix briefly in between.
Add lemon juice and keep beating until no more sugar granules can be felt in the mixture.
Use a small spoon to place individual blobs on the baking paper and place in the center of the oven.
Bake at 110 ° for approx. 90–110 minutes and leave to cool in the oven.
Mix all dry ingredients and bring to the boil together with the pureed fruits and lemon juice for approx. 1-2 minutes.
Fill into sterilized jars while still hot, I always put a few drops of rum on the twist-off lid.
Seal immediately.
The Variegato must be completely cooled before layering in the ice.
