I love vanilla ice cream and this is my personal favourite?

Very creamy ?

You can find this great ice cream, rounded off with a little egg yolk, at full-bodied vanilla ice cream.

Ingredients

20 g Eis-Perfecto
80 g Perfecto-More
pinch of salt
20g very good vanilla sugar
170g sweetened condensed milk
460g whole milk 3,5%
15g Perfecto binder
15g homemade vanilla paste or a vanilla pod (I used vanilla pod)
220g cream 30%

Method

Step 1:
Mix the dry ingredients together well
Step 2:

Heat dry ingredients, milk cream, sweetened condensed milk and the vanilla pulp, as well as the vanilla pod or the homemade vanilla paste to 85 degrees and let it steep for 15 minutes at the same temperature. Stir again and again or, if using a food processor, set the minimum stirring speed.
Step 3:

Cool the ice base and let it mature in the refrigerator for at least 6 hours
Step 4:

Take out the scraped out vanilla pod and mix the base again briefly (a whisk is enough)
Step 5:

Freeze with the ice cream maker or the hand method
Step 6:
Transfer the finished ice cream to a freezer container
Step 7:
Leave to freeze in the freezer at -24 degrees for 18 hours
Step 8:
Enjoy

I tried this ice cream for the first time and I have to say it is delicious and very creamy. It's the best vanilla ice cream I've ever made. I am definitely sticking to this ice cream.

I also like this ice cream very much. Have done it before.
At the moment I'm mixing everything together ... and I'm looking forward to the end result.
