Vanilla paste recipe for ice cream and desserts.

Tip: You can also make the vanilla paste recipe with vanilla pods. Just add the vanilla pods together with the Sorbet-Perfecto and the sugar, mix in a thermo food processor or stand mixer until the vanilla pods are finely ground. Then continue as in the recipe.

Ingredients

200 g of water
80 g Sorbet-Perfecto
40 g sugar
20 g of ground vanilla or vanilla pods

Preparation

Step 1:
Sorbet-Perfecto Mix and sugar and bring to the boil together with the water in a small saucepan.
Step 2:
Add the ground vanilla and bring to the boil again for 1 minute and then let it steep for 10 minutes at a very low temperature (it must not boil).
Step 3:
Pour into a sealable jar, allow to cool and store in the refrigerator after cooling.

The paste is relatively runny.
